The Best of Fudge..

What is fudge exactly? Well, in the simplest way, it is a sweet, sticky yummy goodness. Traditionally made with extra sweet condense milk, mixed with dry fruits and nuts, sometimes brightly colored, cut into small squares, ready to munch on.  Extremely easy to make, and it did not require baking. So, as you see, you do not have to worry about technical baking stuff. It is really, extremely easy.

There are few different schools of making fudge at home. Each one of them with only few ingredients, and usually being a variation of another one. Well, from what I see, researching for this subject, the most popular in use is sweet condense milk. But you will see the recipes asking to use marshmallows, or just milk, sugar, and butter, as a base to the whole treat. No matter which way you will choose, and perfected for yourself, it will be delicious, no doubt.  And the good thing is, that despite the differences in ingredients, the method of preparation is absolutely the same. After all the ingredients are melted together, after adding extra ingredients (dry fruits, marshmallows, peanut butter cups, nuts etc.), you  must transform everything to the greased pan; depends how thick you want your fudge to be, it can be  half size baking sheet, or 9 x 9, you can make them individual too, in silicon forms; spread it evenly, flatten the top, add toppings ( if apply),and let it chill for few hours in the fridge. After it solid, cut in the desired size pieces, and enjoy!

Basic Chocolate fudge

INGREDIENTS:

2 cups of milk chocolate chips

1 x 14 oz can sweetened condensed milk

2 tablespoons of unsweetened   butter

1 teaspoon of vanilla extract

Basic White chocolate fudge

INGREDIENTS:

2 cups of white chocolate chips

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened   butter

1 teaspoon of vanilla extract

Grasshopper Fudge

INGREDIENTS:

2 cups of white chocolate chips

½ cup of milk chocolate chips (for drizzled decoration)

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened butter

1 teaspoon of peppermint extract (be careful, because too much will give you toothpaste flavor)

Few drops of green food coloring

White chocolate cranberry and Macadamia Fudge

INGREDIENTS:

2 cups of white chocolate chips

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened butter

1 teaspoon of vanilla extract

¾ cup of dried cranberries

¾ cup of Macadamia nuts

White chocolate pistachio and cranberry Fudge

INGREDIENTS:

2 cups of white chocolate chips

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened butter

1 teaspoon of vanilla extract

¾ cup of dried cranberries

¾ cup of shelled pistachios (you can chop them if you like) 

Pistachio Fudge

INGREDIENTS:

2 cups of white chocolate chips

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened butter

1 -2 teaspoon of pistachio extract

¾ cup of shelled pistachios (you can chop them if you like)

Strawberry Fudge

INGREDIENTS:

1 x 16 oz can of strawberry frosting

1 x 14 oz can of sweeten condensed milk

12 ounces white chocolate chips

2 tablespoons of unsweetened butter

1/2 teaspoon strawberry extract

1/4 cup red and white sprinkles (fully optional)

Coconut Almond Fudge aka Almond Joy

INGREDIENTS:

2 cups of white chocolate chips

1 x 14 oz can of sweeten condensed milk

2 tablespoons of unsweetened butter

1 teaspoon of almond extract

¾ cup od shredded unsweetened coconut

½ cup of chopped almond pieces

Lemon pie fudge

INGREDIENTS:

1 x 16 oz can of lemon frosting

1 x 14 oz can of sweeten condensed milk

2 tablespoons of unsweetened butter

1 teaspoon of lemon extract

zest of 1 lemon

20 Lemon Oreo cookies coarsely chopped

Maple walnut Fudge

INGREDIENTS:

1 cup of unsalted butter cubed

2 cups of brown sugar (packed)

1 x 5 oz can of evaporated milk

1 Tablespoon of maple extract

1 teaspoon of vanilla extract

pinch of salt

1-1/2 cups of chopped walnuts

3/4 cup of toffee bits or mini kisses (fully optional)

Piña Colada Fudge

INGREDIENTS:

2 cups of white vanilla chips

3 – 4 oz of macadamia nuts, chopped, toasted

1 x 16 oz can of Vanilla Frosting

2 tablespoons of unsweetened butter

1/2 cup chopped dried pineapple

1/2 cup coconut, toasted

1 teaspoon rum extract

1 teaspoon coconut extract

½ cup of sugared cherries (or Maraschino) for decorations

Oreo Fudge

INGREDIENTS:

2 1/2 cups of sugar

1/2 cup unsalted butter (or margarine) cubed

1 x 5 oz can of evaporated milk (2/3 cup)

2 cups of marshmallow fluff

8 oz of vanilla-flavored candy coating/ almond bark pieces

1 teaspoon of vanilla extract

20 Original Oreo black and white cookies

Chocolate Peanut butter cup Fudge

INGREDIENTS:

1 1/2 cups granulated white sugar

1 x 5 oz can of evaporated milk (2/3 cup)

1/2 cup peanut butter

2 cups of mini marshmallows

1 cup semisweet chocolate pieces (mini kisses)

1/2 teaspoon of vanilla extract

12 regular sized peanut butter cups, chopped / 1 1/2 cups chopped smaller size (save few of them for sprinkling on top)

Peanut butter Fudge

INGREDIENTS:

2 cups granulated white sugar

2/3 cup evaporated whole milk (2%)

1 dash of salt

4 heaping tablespoons creamy peanut butter

1 teaspoon vanilla extract

Key Lime fudge

INGREDIENTS:

1 x 5 oz can of evaporated milk (2%)

2/3 cups of granulated white sugar

2 tablespoons of unsweetened butter

1/2 teaspoon salt

12 large marshmallows

2 cups white chocolate chips

1/4 cup of grated lime zest (about 5 limes)

2 tablespoons of key lime juice (5 to 7 limes, juiced)

Candy cane Christmas Fudge

INGREDIENTS:

12 ounces white chocolate chips

1 x 14 oz can sweetened condensed milk

2 tablespoons of unsweetened butter

1/2 teaspoon peppermint extract

1 ½ cups crushed candy canes

Birthday Fudge

INGREDIENTS:

12 ounces white chocolate chips

1 x 14 oz can sweetened condensed milk

2 tablespoons of unsweetened butter

2 teaspoons of vanilla extract

3/4 cup of assorted color sprinkles (save 1/3 for the topping)

Fantasy/Rainbow/ Unicorn Fudge

INGREDIENTS:

2 cups of white chocolate chips

1 x 14 oz can of sweeten condensed milk

2 tablespoons of unsweetened butter

1 can of rainbow (unicorn) frosting

1 1/2 cup of rainbow mini marshmallows

1/2 cup of glittery sprinkles/ shinny sprinkles for decorations (fully optional)

*Tip: you can swap the unicorn frosting, for vanilla one, and after everything is combined, you can separate the batter into few bowls, and use different colors of food colorings.  Then in a grease dish, you could layer them evenly, or make a swirls, to mix the colors a bit.

Cherry blossom Fudge

2 cups of chocolate chips (white or milk)

1 x 14 oz can sweeten of condensed milk

2 tablespoons of unsweetened butter

1 cup of candied (glazed) red cherries, cut in quarters

2 -3 tablespoon of Kirsch (cherry liquor) /

Or cherry extract (nonalcoholic)

Orange Creamsicle fudge

INGREDIENTS:

3/4 cup of unsalted butter

3 cups sugar

3/4 cup heavy whipping cream

1 package white baking chips (10 to 12 ounces)

7 oz of marshmallow fluff

3 teaspoons orange extract

12 drops orange food coloring

After all ingredients are mix, but before adding food coloring separate a little bit, and keep it on the side. When the rest is already orange colored, put the light batch on top, and using toothpick or fork, make a marble swirl design, so both layers will be slightly mixed.

Marshmallow Almond aka Rocky Road Fudge

INGREDIENTS:

1/3 cups semisweet chocolate chips

1 x 14 oz can sweetened condensed milk

2 tablespoons of unsweetened butter

1 teaspoon vanilla extract

1/3 cups miniature marshmallows

½ cup of chopped almonds

10 – 12 graham crackers, broken into bite-sized pieces

*Tip: you can use white chocolate chips, and colored mini marshmallows

Cookies and Cream Fudge

INGREDIENTS:

16 Oreo cookies, chopped

1 x 14 oz can sweetened condensed milk

2 tablespoons of unsalted butter

1 ½ cups of white chocolate chips

1 teaspoon vanilla extract

1 cup mini marshmallows

Chocolate Cherry Fudge

INGREDIENTS:

2/3 cup evaporated milk

1 1/2 cups granulated sugar

2 tablespoons of unsalted butter

1/4 teaspoon salt

2 cups miniature marshmallows

1 1/2 cups semisweet chocolate chips

1 teaspoon vanilla extract

1 cup maraschino cherries, chopped and drained

3 tablespoons of Kirsch (cherry liquor- optional)

Strawberries and Cream Fudge

INGREDIENTS:

2 packages white chocolate chips (10 oz each)

1 x 14 oz can sweetened condensed milk

2 tablespoons of unsweetened butter

1 cup of marshmallow creme

1 teaspoon strawberry extract

3 drops red food coloring

Before last step of adding red food, coloring separate the batter into 2 dishes (75% to 25%). Add the color only to one of them. Transfer the red to the greased dish. Then top with the white one. Using fork or toothpick, create a swirl design, mixing two colors slightly.

Salted Dark Chocolate Pretzel Fudge

INGREDIENTS:

1 1/2 cup of dark chocolate chips

1¼ cup semi-sweet chocolate chips

1 x 14 oz can of sweetened condensed milk

½ cup of caramel sauce

¼ cup unsalted butter

1½ teaspoons of vanilla extract

¼ cup pretzels crushed into chunks

1 tablespoon sea salt

Smore’s Fudge

INGREDIENTS:

2 cups of milk or dark chocolate chips

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened butter

10 -12 large Graham crackers, crushed into pieces

¾ cup of white mini marshmallows

After the fudge is set, and cut into pieces, for better visual effect, you can torch the marshmallow pieces, visible at the top.

Christmas cookie Fudge

INGREDIENTS:

2 Tablespoon of Unsalted Butter

2 x 12 Oz Bags White Chocolate Chips

1 x 14 Oz Can Sweetened Condensed Milk

¾ Cup Sugar Cookie Box Mix

½ Cup Holiday Sprinkles Plus More for Top

Dark chocolate, pomegranate, and pistachios Fudge

INGREDIENTS:

1 lb. dark chocolate chips

1 x 14 oz of sweetened condensed milk

2 tablespoons of unsweetened butter

1/2 juicy pomegranate seeds

1/2 cup pistachios, shelled and chopped

Fruit cake Fudge

INGREDIENTS:

1x 14 oz can of sweetened condensed milk

2 cups of white chocolate chips

2 tablespoons of unsweetened butter

1 cup of marshmallow fluff

2 teaspoons of rum extract

1/4 cup of candied cherries

3/4 cup of dried fruits and nuts (raisins, apricots, pecans, pineapple etc. that is you will add to fruitcake)

Salted Dark Chocolate Toffee Fudge

INGREDIENTS:

1 tablespoon unsalted butter

1 x 14 oz can of sweetened condensed milk

11.5 ounces dark (or extra dark) chocolate chips

1 teaspoon flaky sea salt plus more for garnish

1/2 cup toffee bits plus more for garnish

White chocolate caramel pecan Fudge

INGREDIENTS:

3 cups of white chocolate chips

1 x 14 oz can of sweetened condensed milk

2 tablespoons of unsweetened butter

1/2 tablespoon of vanilla extract

1 cup of chopped pecans

1/2 cup of room temperature caramel sauce
